8 3oz pieces of veal or chicken
8 pieces of thin sliced proscitutto ham
8 slices mozzarella cheese
1/2 lb. fresh mushrooms (or small can)
sherry
marinara sauce
butter
COMBINE:
1 lb. ricotta
1 egg
grated Parmesan cheese
parsley

Directions:
Directions:
Pound the cutlets as thin as possible. Lay slices of mozzarella & prosciutto on each cutlet, Fill with a spoonful of ricotta mixture. Roll and fasten with a toothpick. Dredge rollatine in flour and saute in hot oil. Drain oil, add butter, dash of sherry and mushrooms in pan. Lower flame and add marinara sauce on top of each roll. Cook 20-30 minutes. Serve with pasta or rice.
