Ingredients: All-purpose flour 3/4 cup Whole wheat flour 3/4 cup Brown sugar, packed 1/2 cup Baking soda 1tsp Baking powder 1tsp Ground cinnamon 1tsp Ground ginger 1/2 tsp Salt 1/4 tsp Ground nutmeg 1/8 tsp Large egg 1 Light sour cream 3/4 cup Canola oil 3 tbsp Shredded carrot 1 cup Chopped raisins 1/2 cup Vanilla 1 tsp Coconut Cheese Filling: Light spreadable cream cheese 1/3 cup Flake coconut 1/4 cup Icing sugar 2 tbsp Vanilla 1/4 tsp

Directions:Combine first 9 ingredients in a large bowl. Make a well in the center. Beat egg, sour cream and canola oil in medium bowl. Stir in carrot, raisins and the first amount of vanilla. Add to well, stir until moistened. Grease 12 muffin cups with cooking spray. Fill cups 3/4 full. Coconut cheese filling: Combine all four ingredients in a small bowl. Gently press 2 tsp mixture down the center of each muffin. Bake in 400 oven for about 15 min until golden. let stand for 5 min before removing from pan. |
