4 boneless, skinless Salmon Filets
7 oz. prepared Pesto
2 cups seasoned Breadcrumbs or Panko Breading
Salt and Pepper to taste
2 T. Vegetable Oil
Lemon slices
Directions:
Directions:
Preheat oven to 350º.

In large bowl, mix pesto and breadcrumbs.

Lightly grease baking sheet with oil. Place salmon on baking sheet and season with salt and pepper. Divide mixture evenly into 4 portions and press firmly on top of the salmon.

Bake for 10 to 15 minutes or until salmon registers 145º with a meat thermometer. Garnish with lemon slices.
