2 c. elbow macaroni
1 1/2 c. 2% milk
1 1/2 TB. butter, divided
1/4 tsp. salt
1/4 c. dry unflavored bread crumbs (opt.)
1/4 tsp. pepper
2 1/2 TB. flour
1 1/2 c. shredded cheddar cheese

Cook and drain macaroni. Melt 1 Tbsp. butter in a small skillet. Add bread crumbs. Cook and stir until toasted, about 3 mins. Set aside. In medium saucepan melt remaining butter. Add flour. Cook over low heat, stirring constantly for 1 min. Gradually add milk, stirring constantly, until thickened. Stir in salt and pepper. Remove pan from heat. Add cheese and stir until melted.
Stir macaroni into cheese sauce, sprinkle with bread crumbs.
