1 lb sharp cheddar cheese, finely grated
1 lb mild cheddar cheese, finely grated
1 clove garlic, minced *
3 T Worcestershire sauce
1 t salt
2 t dry mustard
Tabasco, to taste
16 oz can beer, flat

Note: COON brand cheese is the best. Combine all ingredients (except beer) and beat unmercifully. Pour in beer slowly, beating constantly until cheese is smooth. Remove from refrigerator half hour before serving and beat once more. *1/2 t liquid garlic can be substituted.
