1 lg or 2 med firm Bananas, peeled and diced
1/2 C Red Bell Pepper, seeded and diced
1/2 C Green Bell Pepper, seeded and diced
1/2 C Yellow Bell Pepper, seeded and diced
1/2 C Orange Bell Pepper, seeded and diced
3 T chopped Fresh Cilantro
2 Green Onions, chopped
2 T Lime Juice
1 T Brown Sugar
2 tsp minced fresh Ginger Root
2 tsp Olive Oil
1 tsp minced Habanero or Jalapeņo pepper
Salt to taste

Mix together all the ingredients in a bowl. Serve within 1 hour.

I mix together all the ingredients except the banana ahead of time and then add the banana just before serving.
