For each serving you need

1 corn tortilla
2 eggs
½ to ¾ cup Ranchero Sauce
¼ cup grated Jack Cheese
Fresh Cilantro

Re-fried or Black beans
More corn and flour tortillas to serve with it
Directions:
Directions:
Sauce, If you have Salsa Fresca put it in a pan and add enough tomato sauce to make into a nice marinara sauce consistency. Simmer about 15 minutes until tomatoes and onions are cooked and broken down. OR heat up a jar of thick salsa like Pace Picante Sauce, but the fresh sauce is way better.

Heat oven to 350

Heat tortilla on hot griddle or frying pan about 30 seconds a side or more to your liking. Place on oven proof plate or cookie sheet. Fry 2 eggs sunny side up or over easy (the heated sauce and oven time cooks them a little more) and slide them on the tortilla. Do not top with sauce until you have all the eggs cooked and ready to go in the oven. Spoon heated sauce on eggs, top with cheese and bake until cheese is melted and sauce is bubbly. Be carefull if you have to take them off a cookie sheet, use an extra wide spatula to plate them. Sprinkle with fresh cilantro. Serve with hot beans and hot flour or corn tortillas.

If you do not like over easy eggs, cook them longer or scramble them.
