Prime Rib Roast or Cross Rib or Sirloin Roasts are the best cuts

Roast Beef
garlic cloves cut in slivers
1/2 cup cooking wine
salt and pepper to taste

Directions:
Directions:
cut slits into top and bottom and sides of roast and insert slivers of garlic into slits. Season with salt and pepper and insert meat thermometer in the thickest part of roast making sure that it does not touch any bones for a true reading. When temperature has reached desired degree of doneness take roast out of oven immediately and let rest one half hour before carving.
Note: Rule of thumb ..usually each lb serves 3 to 4 people. A rolled roast will require 5 to 10 minutes longer cooking.
