1/2 lb. thickly sliced bacon
3 T olive oil
2 1/2 lg onions, coarsely chopped
3 lg garlic cloves, minced
1 - 28 oz and 1 - 16 oz can diced or chopped tomatoes with liquid
2 t sugar
2 t salt
1/4 t red pepper flakes
1/4 c fresh or jar parsley
1 1/2 lbs wide pasta noodles ( I use No Yolks)
grated Parmesan

Directions:

Fry bacon until crisp. Drain. Pour out all grease except 1 T from skillet. Add olive oil and onions to skillet. Saute onions 5 minutes until wilted. Stir in garlic, tomatoes, salt, pepper, and sugar. Simmer 30 minutes to reduce liquid. Crumble bacon and add along with parsley. Remove sauce from the
heat. Toss cooled pasta with a bit of sauce. When ready to serve, top each serving of noodles with additional sauce and cheese.
