1 Tbs butter
2 shallots (finely chopped)
2 tbs tomato paste
1 tsp smoked or regular paprika
1 tbs flour
salt and pepper to taste
1 cup beef or vegetable stock
2 tbs capers
1/4 cup chopped parsley

Directions:
Directions:
In a large skillet heat and melt butter. Add the shallots and cook them till tender-about 1-2 minutes. Stir in tomato paste and paprika-cook for a minute, then add flour cooking for another minute. Whisk in the stock season with salt and pepper. Cook until thickened, about 2-3 minutes. Remove from heat, stir in capers and parsley.
Enjoy over pasta!
