3 C Flour
2 tsp Baking Powder
½ tsp Salt
1 C Brown Sugar
1 C Sugar
2 Eggs
½ Pound Roasted Almonds
¼ C Luke warm water
1/3 C Vegetable Oil (or Olive Oil)
2 tsp Almond Extract

Directions:
Directions:
Pre-heat oven to 350 degrees. In medium bowl, add flour (sifted), baking powder and salt. In large bowl, add eggs, almond extract, water, sugar, brown sugar and vegetable oil. Add almonds to the large bowl. Add dry ingredients in medium bowl to the liquid ingredients in the large bowl. Place dough in refrigerator to cool.

Once cool, spray cutting board with Pam spray and roll dough into long log form. Separate the log into 3 parts. Roll each part into long log. Place each on the cookie sheet. Take a toothpick and prick holes on the top of each log. Place in oven at 350 degrees for 30 minutes.

Remove from oven and let cool. Cut in biscotti slices.
