Coarsely crush one sleeve of Saltine crackers in a bowl- not too finely. Set aside.

Finely chop approximately 1/3 cup each onion, green and red peppers, and small clove of garlic. Lightly sauté all in butter, add pepper to taste (no salt necessary- Saltines have enough)

Add sauté into bowl of Saltines. Add ¼ cup mayo. Mix well. Fold in ½ pound crabmeat. Try to roll into ball size- if too dry add some fresh breadcrumbs.

Pat ball down into patty shape. Fry on each side until golden. Serve immediately, or refrigerate and reheat at 400 for ~ 10 minutes.

1 T Sweet Chili Sauce
1 T Soy Sauce
1 T Serrano Chili, finely chopped

Whisk it all together. Salt and pepper to taste. I also add some minced ginger. I also add a bit more peppers to spice it up, as the crab cakes themselves are mild. The peppers are hot, so finely chop and add in small increments.
