2 Large Potatoes, Peeled and Halved
1 Pound Cod Fillets, Cubed
1 T Butter
1 T Grated Onion
1 T chopped Parsley
1 Egg
2 C Oil for Frying

Directions:
Directions:
Place potatoes in a large pot of water and bring the water to a boil. Let the potatoes cook until they are almost tender, about 10 minutes. Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer to a large mixing bowl.

Add butter, onion, parsley and egg to bowl. Mash the mixture together with a potato masher. Mold the mixture into patties.

Heat the oil in a large skillet. Fry the patties on both sides until golden brown. Make sure one side is done before flipping otherwise they’ll fall apart! Drain on paper towels before serving.
