4 cooking apples, cored and sliced (not peeled) into 3/4 inch slices, either Gala, Granny Smith, or other variety
1 Tablespoon of bacon fat or butter
1/2 cup sugar or 4 packages of Splenda

Directions:
Directions:
Place apples into a heavy skillet, where bacon has been fried, and fat poured off, or into a fresh skillet with 1 Tablespoon bacon fat or melted butter. Do not use an iron skillet, or it will turn the apples dark. Fry on medium heat, for 5 - 10 minutes, turning occasionally. Turn heat down to low, and cover, cooking for an additional 5 - 10 minutes, until fork tender. Uncover and simmer for another 5 - 10 minutes, until the juice from the apples has cooked down. Sprinkle with sugar or Splenda and stir gently.
