2 Salmon fillets, thawed (about 1 lb)
1 tsp. fennel seeds
2 TB. olive oil or butter
1 tsp. ground cumin
1 tsp. dry mustard
1 TB. brown sugar
1 tsp. chili powder

Directions:
Directions:
Use one T. of olive oil or melted butter on the top (non skin side) of each fillet. Mix remaining dry ingredients in a bowl then press half the mixture on top of each oiled fillet. Let sit refrigerated and covered for at least 30 minutes or overnight to let the flavors from the rub permeate into the flesh of the salmon. Preheat oven to 400 ºF. Place fillets into a greased pan. Cook uncovered 6 minutes for medium-rare, 8 minutes for well done.
