2 (7 1/2 oz.) cans pink salmon, well drained
1/2 c. finely chopped onion
1/2 c. finely chopped celery
1/2 tsp. Old Bay seafood seasoning
1 egg, slightly beaten
2 tsp. lemon juice
1/4 c. mayonnaise, do not use lite
1 T. Dijon-style mustard, whole grained white wine is better
1 c. fine saltine cracker crumbs, divided (about 21 crackers)
1 T. finely minced sweet red pepper (optional)
2 T. canola oil
2 T. butter

Mix salmon, mayonnaise, Old Bay, lemon juice, egg, and mustard; add 1/3 c. cracker crumbs. Mix well. Fold in celery and onion. Divide into 4 equal portions. Form into patties. Coat with remaining crumbs. Melt butter and oil. Brown over medium heat 5 minutes per side. Serve with horseradish or tartar sauce. Chill patties at least an hour before cooking.
