45 vanilla wafers
5 ripe bananas, sliced
1 c. sugar
1/3 c. all purpose flour
dash of salt
3 eggs
12 oz. evaporated milk
1/2 c. milk
1/2 tsp. vanilla

Directions:
Directions:
Mix 3/4 cup sugar, flour, and salt in microwave safe bowl. Add milk. Mix well. Cook uncovered in microwave for 5 minutes. Beat 3 egg yolks with a fork in a small bowl. Add several spoons of hot mixture to egg yolks to temper. Mix well. Add eggs to hot mixture and mix well. Cook approximately 3 minutes until thick. If too thick, add water or milk. Add vanilla.
Cover bottom of 1 1/2 quart dish with vanilla wafers. Layer bananas. Spread 1/2 custard over bananas. Repeat. Top with wafers. Beat egg whites until soft peak forms. Gradually add 1/4 cup sugar. Beat until stiff. Spoon on top of pudding. Bake at 350º for 15-20 minutes.
