2 cans (10 ounces each) mild enchilada sauce, divided. (Depends on how spicy you want it. Sometimes I use one can hot and one mild.)
1/3 c. chopped green onion
2 c. cooked chicken (you may want more)
2 c. (8oz.) shredded Monterey Jack cheese, divided
1/2 c. sour cream
10 (5 or 7 inch) flour tortillas
2 cans (4 oz. each) chopped green chilies, undrained

Preheat oven to 350ºF. Pour 1 can enchilada sauce in 13X9-inch baking dish. In large bowl, combine chicken, sour cream, chilies, and onion; stir in 1 cup of the cheese. Spoon about 1/3 cup chicken mixture down center of each tortilla. Pour remaining 1 can enchilada sauce over top; sprinkle with remaining 1 cup cheese. Bake, uncovered, 30 minutes or untl cheese melts and enchiladas are heated through.

I really like these enchiladas, so I put in the recipe. I know there are other recipes already in the cookbook. Perhaps they are the same. I did not look.
