6 oz. Raspberry Jello---dissolved with 1 and 1/2 C boiling water
1 large can of Blueberries in light juice/syrup-NOT pie filling
1 large can crushed pineapple
1 8oz. cream cheese (light or no-fat OK)
1 8oz. sour cream (light or no-fat OK)
1/2 C sugar or Splenda
vanilla

Directions:

Dissolve Jello in boiling water. Add blueberries (juice and all), pineapple (juice too). Pour in a 9x13 glass dish. When congealed, spread topping as follows:
1-8oz pkg. Cream Cheese (soft)
1-8oz. carton Sour Cream
1/2 Cup sugar
1 tsp. vanilla
Mix together until smooth. Spread on congealed Jello. Sprinkle 1/2 Cup chopped pecans or walnuts on top. Chill well (overnight best). Cut into squares. Serve & enjoy!

This goes really well with a "tea room" luncheon and one of mom's favorites to go with her Vermicelli salad. It's so easy to make and delicious! Can also be just a great dessert.
