˝ cup vegetable oil 1 cup flour
2 cups yellow onion (chopped) ˝ cup celery (chopped)
˝ cup canned whole tomatoes Salt & cayenne pepper to taste
1 gallon boiling water 1 lb crawfish tails

Directions:
Directions:
Heat oil in large pot (preferably cast iron) and stir in flour, stir constantly while cooking over low heat until it is a dark, reddish brown, about 30-45 minutes. Add onion, celery, and tomatoes and sauté 5 minutes. Add salt, cayenne and boiling water. Simmer slowly for 2 hours. Serve with white rice.
