1/4 cup olive oil
1 tablespoon Balsamic vinegar
4 or 5 cloves garlic
1 tsp. thyme
1/2 tsp. basil
12 oz mastoccoli pasta (precook per pkg instructions)

Vegetables...
cut up small eggplant
slice purple onions very thinly
cut up zucchini and summer yellow squash
slice thinly green and red peppers

Directions:

Heat oven to 425 degree. Mix vegetables and dressing in bowl add 1/2 cup chicken broth. Spread mixture in baking dish. Cook in preheated oven for 2 to 3 mins. Pour over cooked pasta and add Parmesan cheese, parsley, for garnish and salt and pepper to taste.
