4 tsp peanut or other vegetable oil
2 eggs, beaten
2 T chopped onion
2 T chopped green onion
2 T chopped carrots
4 c steamed white rice
1 c chopped cooked chicken
1 tsp sesame seeds
3/4 tsp salt, optional
1/4 tsp black pepper
2 T margarine
4 tsp soy sauce

Directions:
Directions:
Heat a 12-inch nonstick skillet or wok over medium heat. Add 1 tsp oil and scramble the eggs until just firm. Remove from the pan and let cool; then chop the eggs and reserve.

Meanwhile, add the remaining 1 T oil to the pan, and raise the heat to medium-high. Saute the onion, green onion, and carrots until tender, about 2 to 3 minutes. Mix in the rice, chicken, and chopped eggs. Add the sesame seeds, salt, and pepper, stirring well. Add the margarine and soy sauce to the mixture, stirring until well combined.
