2 TB. vegetable oil
1 c. flour
3 tsp. baking powder
3/4 c. milk
1/4 tsp. salt
1 TB. brown sugar

Beat egg until fluffy. Beat in remaining ingredients. Heat skillet over medium heat. Use 1/4 cup of batter for each pancake.

This recipe needs to be at least doubled.
So, just the other day, Rachel and I decided to make breakfast for supper. I took out the tuperware container that holds the Hungry Jack pancake mix, added water, and made a whole electric skillet full of pancakes. I noticed they weren't bubbling like normal pancakes do when it is time to be flipped. They also looked pretty pale. I was curious about these pancakes, so I picked one up and tasted it...it was disgusting. I went back to the container and saw a note taped to the side from mom: "Small bag, pancake mix. Large bag, cake flour." Needles to say, there was no small bag in the container. I had whipped up a nice big batch of flour-and-water cakes. Yum. So, this recipe for homemade pancakes came in handy when we had to start over with supper. We added some cinnamon and nutmeg, and they were delicious!
