1 c. sugar
1 tsp. vanilla
1/2 c. butter or shortoning
pinch of salt
2 eggs
1 tsp. baking soda
3 bananas mashed
1/2 -1 c. nuts
5 tsp. sour milk or buttermilk
2 c. flour

Directions:
Directions:
Cream butter, sugar, and eggs. Add bananas, milk, vanilla, salt, soda, and nuts. Mix in flour. Put in a long, greased loaf pan and let stand 20 minutes before baking. Preheat oven to 350ºF. Bake 1 hour.

I use 2 smaller loaf pans and bake it for only 30 minutes. To make sour milk, add 1/2 tsp vinegar to 1 c. milk. VARIATION: I use 1 1/2 c. sugar, I add 1 TB. oil (makes it very moist), 4 TB. milk + 1TB. lemon juice, and 1/2 tsp. salt. This banana bread is my stand-by, very basic, yummy and easy. I sometimes like to cook it @ 325 for 70 min., it avoids the dark crust and gooey middle that sometimes happens with banana bread.
