Gravy:
1/2 Pound Hot County Sausage
4 Tablespoons Butter
3 Tablespoons Flour
1/2 Teaspoon Cayenne Powder
1/2 Teaspoon Garlic Powder
Freshly Ground Pepper
2 Cups Warm Milk

Directions:
Directions:
Brown sausage in skillet over medium-high heat. Once brown, remove sausage from skillet and set aside.
In small bowl, mix flour, cayenne and garlic.
Over medium heat melt butter. Add the flour mixture and whisk until smooth and bubbly about 1 minute. Add the warm milk slowly and bring to a boil. Reduce the heat to a low simmer, add browned sausage and stir until thickened, about 5 minutes, add more milk as necessary to control the thickness. Season the gravy with salt and pepper. Serve hot over biscuits.

This gravy can easily be made less spicey by reducing the amount of Cayenne and using mild sausage in stead of the Hot.
