3 lb beef roast ( bottom round is fine)
1 c water
1 c cider or wine vinegar
2 bay leaves
1 1/2 tsp. salt
1/8 tsp. pepper
2 large onions, cut into 1/4's
1 T sugar
10 whole cloves
1 box gingersnaps

Directions:
Directions:
Cover meat with vinegar. Add water, onion, bay leaves, cloves, salt, pepper and sugar. Let stand refrigerated for 24 hours to marinate Cook about 3 hours with liquid till tender. Add grated gingersnaps to strained liquid to make gravy. Serve with potato pancakes or dumplings.
