1 c orzo (uncooked)
1 T butter
1 c finely chopped onion
1 T oil oil
1 1/2 lbs. sweet sausage
1 c finely chopped mushrooms
2 large eggs
1 c heavy cream
1/2 c finely chopped parsley
1/2 c grated Parmesan
salt, pepper

Directions:
Directions:
Preheat to 350 degrees. Butter 10x 1 1/4 inch metal or glass pie tin. Cook orzo, drain. Mix with buttered skillet, slowly cook onion in oil till golden. Remove casing from sausage and add to the pan, breaking it into small pieces. Add mushroom and cook till done. Remove with slotted spoon. Add to orzo. Beat eggs, whisk in cream and add to meat. Stir in parsley 1 1/4 c Parmesan, salt and pepper. Transfer to pie plate, sprinkle with rest of cheese. Bake 25 minutes until bubbly.
