1 tbsp sunflower oil
1 garlic clove, halved
2 scallions, finely sliced
7-1/2 oz cans water chestnuts, drained
and finely sliced (optional)
1 lb spinach, any tough stalks removed
1 tsp sherry vinegar
1 tsp light soy sauce
pepper

Directions:
Directions:
1. Heat the oil in a wok or large heavy skillet over a high heat.
2. Add the halved garlic clove and cook, stirring, for 1 minute. If the garlic should brown, remove it immediately.
3. Add the sliced scallions and the water chestnuts and stir for 2-3 minutes. Add the spinach and stir.
4. Add the sherry vinegar, soy sauce and a sprinkling of pepper. Cook, stirring, until the spinach is tender. Remove the garlic.
