3 large potatoes
1/2 c. sour cream
1/2 c. half & half
4 green onions, sliced
1/8 tsp paprika
1-1/4 c. Cheddar cheese, shredded
Salt and pepper to taste

Directions:
Boil potatoes until tender, peel and shred. Mix potatoes with remaining ingredients and place potato mixture in buttered casserole dish. Bake 30 to 40 minutes at 350º.
