2 eggplants
1-1/4 c. milk
4 eggs
1/2 c. celery, chopped
1 small onion, chopped
1 tsp. sage (optional)
1/4 c. sugar
3-1/2 c. bread crumbs
3 c. grated cheese
1/2 c. margarine
salt and pepper to taste

Directions:
Directions:
Peel, slice and boil eggplant until soft. Drain. Partly cook celery and onion in margarine. Mix all ingredients in bowl. Put in a greased casserole. Bake at 450º for 20 minutes. Top with cheese and put back in oven until cheese melts. (You can put some of the cheese into the casserole.)
