Sicilian Meat Loaf Recipe

1 1/2 lbs. ground beef
1/2 cup tomato juice
2 eggs, beaten
1/2 cup soft bread crumbs
1 1/2 tsp. salt
1/2 tsp. ground pepper
1/4 tsp. oregano
2 cloves garlic, minced
3 tsp. dried parsley flakes
8 oz. mozzarella cheese, shredded
6-8 slices of ham

Mix all ingredients except ham and cheese. Roll on double layer of wax paper to a 10x16 inch rectangle. Place ham on meat mixture, leaving a border. Sprinkle on cheese, roll up. Squeeze and tuck ends under to seal. Bake for 1 hour at 350. Let set for 15 minutes before cutting.
