2 tbsp olive
2-1/4 c Basmati or Thai jasmine rice, soaked
for 1 hour, washed and drained
3 c coconut milk
1 tsp salt
1 bay leaf
2 tbsp chopped fresh cilantro
2 tbsp chopped fresh mint
2 green chilis, deseeded and finely chopped

Directions:

1. Heat the oil in a saucepan. Add the rice and stir until the grains are translucent .
2. Add the coconut milk, salt and bay leaf. Bring is. Bring to a boil and cook until all the liquid is absorbed.
3. Lower the heat as much as possible. Cover the saucepan tightly and cook for 10 minutes.
4. Remove the bay leaf and stir in the cilantro, mint and green chilis. Fork through the rice gently and serve.

NOTE: Step 3. can be done in the microwave. Transfer the rice to a microwave container, cover tightly, and cook on high 4-5 minutes. Remove the bay leaf and stir in the herbs and chilis. Fluff with fork and serve.
