1 lb feta cheese
1 lb filo dough
2 lbs spinach
1 large onion, finely chopped
1 clove garlic,finely chopped
1/2 lb butter
6 eggs
salt
pepper
pinch of oregano & rosemary

Directions:
Directions:
Melt a large chunk (3-4T) butter in a frying pan over medium heat. Add the onion and garlic and cook until softened. Rinse and dry spinach and chop fine. Add it to the onions. Add salt, pepper. oregano and rosemary. Separate the eggs,putting yolks into one bowl and whites in another. Using a hand mixer, beat the yolks for a few minutes and then blend in the feta cheese, crumbled. Stir in the spinach mixture. Beat the egg whites until they are stiff and carefully fold them into the rest of the pie filling. Preheat oven to 350 degrees. Melt 1/2 lb butter in a small saucepan over low heat. Unroll the filo dough. Using a pastry brush, paint the bottom of a rectangular baking dish 9x13 inches with melted butter. Lay a single sheet of dough over the pan and brush butter on the dough. Lay another sheet over that. Butter it. And another, an so on until you have ten sheets of dough. Then spoon in the spinach mixture and cover t with another sheet of dough. Butter that one. Repeat until you have used up all the filo. Butter the top. Bake the pie between 50 to 60 minutes until crispy.
