Ricotta Cookies:

1# butter (softened – 4 sticks)
3 eggs
2 tsp vanilla
2 cups sugar
1# ricotta cheese
1 tsp salt

4 cups flour
1 tsp baking soda

Frosting:

1# powdered sugar
½ cup butter (softened – 1 stick)

Ricotta Cookies:

Mix together first six ingredients thoroughly. Add flour & baking soda.

Bake at 350 for 10-11 minutes. Let cool. Do not overbake; want a soft (not crunchy) cookie.

Frosting:

Mix to right consistency. Add food coloring.

Refrigerate cookies.
