1 (1.25 pounds) pork tenderloin
1/4 teaspoon(s) salt
3/4 cup(s) water
1/4 cup(s) dried tart cherries
1 teaspoon(s) olive oil
1 small onion, finely chopped
1/2 cup(s) ruby port
1/2 teaspoon(s) fresh orange peel, grated

Cut pork tenderloin into 1 1/4-inch-thick rounds; press each with heel of hand to flatten slightly. Season with salt.

In a 2-cup glass measure, combine water and cherries; microwave on High 2 minutes. Let stand to allow cherries to plump.

Meanwhile, heat oil in nonstick 12-inch skillet over medium-high heat. Add pork in a single layer. Sprinkle chopped onion around pork; cook 4 minutes. Turn pork over and stir onions; cook 4 minutes longer or until pork is barely pink in the center. Transfer pork to plate; cover and keep warm. Add cherries with water in cup, port, and orange peel to skillet; heat to boiling. Boil 1 to 2 minutes until sauce is slightly syrupy.
