3-4 nasty bananas
1 ¼ cup sugar
5 ounces unsalted butter, melted & cooled
2 eggs, room temperature
1 teaspoon vanilla
½ cup toasted walnuts, if desired
1 ½ cups flour
½ teaspoon salt
1 ½ teaspoon baking soda

Preheat oven: 350° conventional/300° convection. Lightly butter one medium loaf pan, and set aside. Place bananas and sugar in bowl of a standing mixer fitted with a paddle & whip the bejesus out of it. While the machine is running, slowly pour in the butter. Add eggs, one at a time, scraping down batter between each addition. Stir in vanilla.

In small bowl whisk together flour, salt and baking soda. Add flour mixture and walnuts to banana mixture and stir just to combine. Pour into prepared pan & bake until risen, dark golden in color, and inserted toothpick comes out clean; about 45 minutes to an hour.
