3 T. Lemon Juice
3 T. Dry White Wine
3 T. Extra Virgin Olive Oil
3 Cloves of Garlic, Minced
1 lb. Medium Shrimp, 30-40 per lb.
1 Bay Leaf
1/4 tsp. Crushed Red Peppers
1/4 tsp. Salt
2 T. Fresh Parsley, Chopped

Combine lemon juice, wine, 2 T. olive oil an garlic in a medium bowl. Add shrimp and toss to coat. Cover and marinate for 15-30 minutes. Drain well, reserve marinade. Heat 1 T. of olive oil in a large skillet over medium-high heat. Add shrimp and cook, turning once, until barley pink, 30 seconds per side. Transfer to plate. Add bay leaf, red pepper and the reserved marinade to the pan, simmer for 5 minutes. Return the shrimp and any accumulated juices to the pan, heat throughout. Season with salt, sprinkle with parsley and serve immediately.
