12 ripe red plum tomatoes, 1 ½ pounds
1 cup basil leaves, chopped, save a few leaves for garnish
2 TBL minced garlic
2 TBL minced Shallots
2 tsp Balsamic Vinegar
1/3 cup plus ½ cup Extra virgin olive oil
Sea salt and pepper to taste
3 cloves slivered garlic

1 /2 pound fresh buffalo Mozzarella cheese, packed in water, drained
1 or 2 sour dough Baguettes

Directions:
Directions:
Dice tomatoes and put in bowl, add minced garlic, chopped Basil, balsamic vinegar and 1/3 cup olive oil, salt and pepper to taste. Put in a serving bowl, Set aside, this is served at room temperature.

Slice baguette in 1/2 inch slices on the diagonal. Toast in the oven until golden. Meanwhile heat remaining ¼ cup olive oil and sauté the slivered garlic until golden. Discard the garlic and save the oil. Brush the toast with the garlic flavored oil and put it in a basket or on a large plate. Slice cheese in ¼ in thick rounds and arrange on a small plate, garnish with whole basil leaves. Let your guests assemble their Bruschetta by placing a piece of cheese on the toast round, then a spoonful of the tomato mixture on the cheese.
