1 (16 oz) bag frozen corn, thawed
1 can of black beans, drained and rinsed
1 sweet red pepper, chopped
1 small onion, chopped
5 garlic cloves, chopped (I used jarred)
1/3 cup of olive oil
1/4 cup of lemon juice
3 tablespoons of vinegar, any kind
1 tsp. dried oregano
1/2 tsp. salt
1/2 tsp. pepper
2 – 3 ripe avocados, peeled and cubed

Directions:
Directions:
Mix first 5 ingredients in a large bowl.
Mix next 6 ingredients to make a dressing.
Add dressing to corn mixture and then add chopped avocados.
Chill at least 3 hours.
