2 T. Salt
2 (1 1/2- 1 3/4 lb) Live Lobster
1/2 lb. Fresh Lump Crab meat
1 T. Olive Oil
2 T. Parsley, Freshly Chopped
2 T. Parmesan Cheese Freshly Grated
2 T. Italian Breadcrumbs
1/4 tsp. Old bay Seasoning
1/4 tsp. Pepper
CHIVE BUTTER SAUCE:
2 T. Heavy Whipping Cream
2 T. Lemon Juice
2 T. Chives, Chopped
1/2 Garlic Clove, Minced
1/2 C. Butter

Directions:
Preheat oven to 400º. Bring 2 quarts of water to a boil. Add salt. Plunge lobsters head first into water, cover reduce heat and simmer for 10 minutes. Drain and cool. Break off tail. Cut top of tail lengthwise. Cut though center of meat, remove vein. Rinse well and set aside. Stir together chopped lobster, crabmeat, garlic, parsley, Parmesan cheese, breadcrumbs, old bay seasoning and pepper. Spoon into tails and mound. Place on large baking sheet. bake for 10-12 minutes. Meanwhile melt butter in heavy sauce pan over low-medium heat, add whipping cream and cook. Stirring constantly for 1 minute. Remove from heat. Stir in lemon juice, chives and garlic. Serve immediately with stuffed lobster.
