1 lb. Catfish, Cut into Serving Pieces
1/2 tsp. Garlic, Minced
1 Egg White, Beaten
1 tsp. Lemon Pepper
1 T. Lemon Juice
1 C. Breadcrumbs
1 tsp. Dried Dill Weed
1 tsp. Dried Basil
1/2 tsp. Dried Oregano

Directions:
Preheat oven to 400º. Spray baking sheet with non-stick spray. Sprinkle fish with lemon pepper. Blend egg white and lemon juice. Combine breadcrumbs, dill weed, basil and oregano and spread on plate or wax paper. Dip one piece of the fish into the egg white mixture to coat, the dip in breadcrumb mixture. Place fish on baking sheet. bake fish for 15 minutes or until lightly golden brown, and the thickest part of the fish flakes with a fork. Season with salt and pepper to taste.
