1/2 c. water
4 oz. vanilla chips
1 c. butter, softened
2 c. sugar
4 eggs, separated
1 tbsp. vanilla
2 21/2 c. flour
1 tsp. soda
1 c. buttermilk
1 c. coconut
1 c. pecans, chopped

Frosting:
1-8oz. pkg. softened cream cheese
1/2 c. butter, softened
1 tsp. vanilla
3 3/4 c. powdered sugar
1 tbsp. milk

Directions:
Directions:
Preheat oven to 350º. Bring water to a boil. Remove from heat and stir in vanilla chips until melted. Cool 20 minutes. Meanwhile, cream butter and sugar. Add egg yolks and mix well. Combine flour and baking soda and add to creamed mixture alternately with buttermilk. Mix well. Stir in coconut and pecans. Beat egg whites until stiff peaks form and fold into batter. Pour into 3 greased and floured 8" round baking pans. Bake 25-30 minutes. Cool for 10 minutes. While waiting for cake to cool beat cream cheese and butter together. Add vanilla, powdered sugar, and milk and mix until smooth. Frost when the cake is cool.
