1 ¾ c finely crushed graham crackers
¼ c finely chopped walnuts (optional)
½ t ground cinnamon
½ c margarine or butter, melted (1 stick)

Filling:
3 8-ounce packages cream cheese, softened
1 c sugar
2 tbsp all-purpose flour
1 t vanilla
2 eggs
1 egg yolk
¼ c milk

Crust: Combine graham crackers, nuts, and cinnamon. Stir in Margarine or Butter. Reserve ¼ cup of the crumb mixture for topping (optional). Press mixture into the bottom and up the sides of an 8 or 9 inch spring form pan.

Filling:
In a mixer combine cream cheese, sugar, flour, vanilla. Beat till fluffy. Add eggs and yolk altogether, beating at a low speed until combined. Stir in milk. Pour into pan. Sprinkle the reserved crumbs on top (optional). Place on a shallow baking pan (cookie sheet) in the oven. Bake at 375 degrees for 45-50 minutes for an 8 inch pan or 35-40 minutes for a 9 inch pan. The cheesecake is done when the center appears nearly set (jiggles) when shaken. Cool 15 minutes. Release the sides of the pan. Cool for an additional 30 minutes. Remove sides of the pan. Cool completely. Chill for 4 hours.
Serve with Whipped Cream and Strawberries or as desired.
