6 medium squash (yellow crook neck)
1/4 teaspoon salt
1 cup diced cheese (Velveeta)
1/4 cup butter or margarine
1 tablespoon onion soup mix (dried)
1 egg

Directions:
Directions:
Preheat oven 400º
Slice the squash and cook in salted water until tender
Drain thoroughly; add margarine and mash
Add the egg (slightly beaten), cheese, and onion soup mix
Stir and pour into a casserole dish
Top with buttered bread crumbs (crackers crumbled may be used); bake uncovered until browned
