2 1/2 to 3 lbs boneless chicken breast
2 T taco seasoning mix
2 T olive oil
2 cloves garlic, minced
1/2 fresh jalapeno chili
4 cans small white beans (drained/rinsed)
1 tsp. chili powder
1 tsp. cumin
1/2 tsp. salt
1/2 tsp. pepper
1 can chicken broth (low sodium)
1 c shredded Monterey Jack cheese

Directions:
Directions:
1. Slice chicken, sprinkle with 1 T. taco sauce
2. Warm 1 T of olive oil in large skillet over med.-low heat. Brown chicken for 2 min. per side.
3. Cook onion, garlic, jalapeno 2 min. in same pan. Add beans, chili powder, cumin, salt, pepper. Cook 2 min.
4. Add chicken and beans to crockpot, stir in broth and taco seasoning. Cover and cook on low 6-8 hours.
5. Last hour add cheese.
6. Top with sour cream, tomatoes and cheese to taste.
