4 egg yolks, room temperature
1 stick butter
Juice of 1/2 lemon, about 1 Tablespoon
Salt and pepper

Directions:
Directions:
Place water in a double boiler, and bring to a boil.
Decrease heat to a simmer, and melt butter in the top pan until melted and hot. Add lemon juice and whisk until blended. Beat egg yolks, and add to the butter mixture a little at a time, whisking constantly until the sauce becomes light yellow and thickens. If the sauce separates add an additional egg yolk and whisk until reincorporated. Serve immediately.
