For Cake:
1 pkg. yellow cake mix
1 pkg. instant vanilla pudding mix
1 1/3 c. water
4 eggs, beaten
1/4 c. oil
2 c. coconut flakes
1 c. walnuts, chopped
For Frosting:
4 T. butter
1 8-oz. pkg. cream cheese
2 tsp. milk
3 1/2 c. confectioners sugar, sifted
1 1/2 tsp. vanilla
2 c. coconut flakes

For Cake: Blend cake mix, pudding, water, eggs and oil in large bowl. Beat at medium speed for four minutes. Stir in coconut and walnuts. Pour into three greased and floured nine-inch layer pans. Bake in preheated 350º oven for 35 minutes. Cool in pan for 15 minutes, then remove and continue to cool on a rack.

For Frosting: Melt two tablespoons of the butter in a skillet. Add coconut, stirring constantly over low heat until golden brown. Spread coconut on a paper towel to cool. Cream two tablespoons of butter with cream cheese. Add milk and sugar, beating well. Add vanilla. Stir in 1 1/2 cup browned coconut flakes. Spread in between layers of cake, on top and sides. Sprinkle with remaining coconut. Got this recipe from Bill Odum.
