5 lbs potatoes
1 lb bacon
1/4 c water
1/4 c vinegar
2 - 4 Tbsp sugar
2 onions thinly sliced

Directions:
Directions:
Boil potatoes in salted water on stove top
When fork tender cool, peel and cut into chunks
Cut bacon into pieces and cook unit half done
Add 1 of the sliced onions to the bacon
When bacon is crisp remove pan from heat and add water, vinegar and sugar. Taste should be sweet/sour - adjust vinegar or sugar accordingly.
Add bacon mixture to potatoes. Salt and pepper to taste. Add remaining sliced raw onion. Let sit to absorb liquides. Serve warm
