1 LB CRAWFISH TAILS
1 - 1 ½ Sticks butter
1 Tblsp. Flour
1 med. Onion, chopped
1 Tblsp. Bell Pepper , chopped
Green onion tops
parsley, chopped
Salt & Pepper to taste

Directions:
Directions:
Melt butter in heavy skillet .
Add flour & stir until blended.
Add chopped onion, bell pepper & cook till tender.
Add crawfish fat & cook about 10 minutes, stirring occasionally.
Add crawfish tails & cover. Let cook 15 -20 min. on Low.
Add Salt & red pepper to taste.
Add Green onion tops & parsley.
Simmer covered until seasonings blend.
Serve over rice.
Water may be added to mixture, but not necessary.




*Try Seasoning blend (fresh or frozen), instead of chopping veggies!
