Another great and different way to use up the left over turkey.
4 cups diced turkey
2 Poblano chilies or Anaheim mild Chilies fresh or canned, seeded and diced
1 large diced onion
4 heads diced garlic
2 small cans chicken broth
1 tsp cumin
24 corn or flour tortillas, about 5 inches round
TOPPINGS
2 cups shredded Pepper Jack cheese or cheese of choice
2 cups diced tomatoes
1 cup diced onions
1 cup chopped cilantro leaves
2 large ripe diced avocados
Sour cream
Assorted hot sauce

Directions:
Directions:
Saute onions in a small amount of oil until limp, add chilies sauté about a minute longer, add the turkey and pour on enough broth to just cover the turkey. Maybe 1 - 1 ˝ cans. Add the cumin, simmer until most of the broth has evaporated, adding more broth if it dries out. You want it slightly moist, but not soupy. Salt and pepper to taste.
Heat tortillas on a hot griddle sprayed with non stick spray, until soft and pliable. Spoon about 2 TBL meat in each tortilla. Let everyone add their condiments of choice to their tacos. Serve with refried beans and rice if desired. Our family ate a lot of tacos, we had a big Lazy Susan in the middle of our round dinner table, making it fun and easy for every one to get what they want on their taco.
